Rockytop Organic Vineyard & Winery

     

We work with nature, aging our wine to its perfection. Our grapes are hand-picked in Autumn at the pinnacle of their season. We do not currently make an ice wine but hope to expand in that direction as our vineyard matures.

We ferment both red and white varietals of the muscadine grape, as muscadines have a wide range of colors from red to black, even on the same vine! Naturally, the major differences in the fermentation are due to the tannins in the skins when producing a red, versus a white. Pinot vintners have done this for years, making Pinot Gris (or Grigio) from a purple grape!

In our winemaking, we are constantly testing and tasting for proper acid and pH balance. Although taste is paramount, we are hopeful that we will reach our goal of producing the best muscadine wine. We work diligently to bring forth the uniqueness of our terroir as our wines move onward in its possibilities.
